Hey Brew Crew,
If you are going to put coffee in brownies, do not be shy about it. None of this 'it just enhances the chocolate' nonsense. We want bold, unapologetic coffee flavour that hits you right in the face.
The secret to ultimate fudginess without making them cakey? Coffee-infused butter.
Grab your coffee grinding machine, load up our boldest Medium Roast Beans, and let's bake a batch that will vanish before it even cools down.
The Line-Up
🍪 12 tbsp unsalted butter (plus extra for the pan)
🍪 ½ cup Urban Brew Medium Roast Beans (freshly ground in your coffee grinding machine)
🍪 1 ½ cups granulated sugar
🍪 ½ tsp vanilla extract
🍪 ¼ tsp sea salt
🍪 2 large eggs + 1 egg yolk
🍪 1 cup cocoa powder
🍪 ⅓ cup plain flour
The Method
-
Preheat & Prep: Heat your oven to 180°C (350°F). Butter a 9-inch cake pan and line the bottom with baking paper (unless you enjoy chiseling brownies off metal later, your call).
-
Grind & Infuse: Fire up your coffee grinding machine and give those medium roast beans a good blitz. Melt the butter in a saucepan over medium heat until hot but not bubbling. Tip in the fresh grounds, pull it off the heat, and let it steep for 5 minutes (try not to drink it straight from the pan).
-
Strain the Magic: Pour the buttery gold through a fine-mesh sieve into a bowl, pressing the grounds hard to rescue every single drop of coffee goodness (channel all your morning rage into this squeeze).
-
Mix It Up: Whisk in the sugar, vanilla, sea salt, eggs, and that lone extra yolk until smooth (yes, the yolk makes it extra fudgy, trust the process).
-
Fold & Pour: Stir in the cocoa powder and flour until just combined. The batter will be thick, dark, and glossy (licking the spatula is practically mandatory).
-
Bake: Scrape into the pan, smooth out the top, and bake for 20 to 25 minutes. You want moist crumbs on your toothpick, not wet batter (and definitely not a hockey puck).
Let them cool on a rack (good luck waiting), slice into massive squares, and pretend you are going to share.
