Listen, we all want to be that person who casually whips up a show-stopping dessert that makes everyone gasp, “How did you even…?” This is that dessert. Except it’s stupidly easy, uses our brand-new Baileys™ Irish Cream pods, and requires exactly zero oven time. You’re welcome.

What You’ll Need (serves 8 very happy people):

For the cheeky base

🍪 250g digestive biscuits (or chocolate ripple if you’re feeling extra naughty)

🍪 100g melted butter (salted, because balance)

For the Baileys velvet filling

🥄 500g full-fat cream cheese (room temp – don’t be a hero with light)

🥄 300ml thickened cream

🥄 100g icing sugar

🥄 3 shots of Urban Brew Baileys™ Irish Cream pod espresso (brewed strong, cooled - this is the secret weapon)

To decorate (because boujee)

✨ Grated dark chocolate

✨ Cocoa powder for dusting

✨ A few coffee beans (for that “I’m basically a patisserie chef” flex)

How to Pull This Off in Under 30 Minutes Active Time:

1️⃣ Blitz the biscuits into fine crumbs (use a food processor or smash them in a zip bag like you’re working out some holiday stress).

2️⃣ Mix with melted butter, press firmly into a 20cm springform tin, and pop in the fridge. Base = done. Feel smug already.

3️⃣ Brew 3 strong shots using your Urban Brew X Baileys™ pods (Nespresso® Original machines only). Let them cool - nobody wants scrambled cheesecake.

4️⃣ Whip the cream to soft peaks (don’t overdo it or you’ll be eating butter).

5️⃣ In a separate bowl beat the cream cheese and icing sugar until silky, then gently fold in the whipped cream and cooled Baileys espresso.

6️⃣ Spoon the cloud-like mixture over your chilled base, smooth the top like you’re a pro, and refrigerate for at least 4 hours (overnight is best - future you will high-five present you).

7️⃣ When ready to serve, release from the tin, shower with grated chocolate, dust with cocoa, and scatter a few coffee beans on top. Watch jaws drop.

Result? A silky, creamy, coffee-kissed masterpiece that tastes like Christmas had a love child with dessert heaven. The subtle Baileys flavour from the pods makes it sophisticated without screaming “I used the good vanilla that’s been hiding since 2019!!” 😏

Pro tip: Cut the first slice in front of everyone. Accept compliments like the domestic goddess/god you now are.
